There is something extra special about receiving a handmade gift; knowing that someone spent time and energy in creating something just for you. That's why we thought we would share a recipe for these Madeleines to give to mum on Mother's Day. Madeleines originate from the northeast of France and are very small sponge cakes with a distinctive shell-like shape. The recipe is quick and simple to make, so the only thing to think about is how to present and gift wrap your goodies. Try putting the Madeleines in our Bella Jar, which can be used after they are all eaten for storing a wide range of other items. 

Ingredients:

  • 3 eggs
  • ½ cup caster sugar
  • Zest of 1 lemon, finely grated
  • Zest of 1 large lime, finely grated
  • ¾ cup plain flour
  • ¼ teaspoon baking powder
  • 65g unsalted butter
  • Icing sugar, to dust

Method:
Makes 24
Preheat oven to 200°C. Melt butter and use a pastry brush to grease two 12 shell madeleine baking pans. Use an electric beater to beat eggs, sugar, lemon zest and lime zest until think, pale and doubled in volume. Fold in flour, baking powder and butter.

Add mixture into each shell on the madeleine moulds, filling to 4-5mm from the top. Bake for 10 minutes or until golden. As the cakes are small they will cook very quickly, so make sure to check often and use a cake tester. Allow to rest before removing from moulds. Cool on a wire rack and then dust with icing sugar. Enjoy!
